Preheat oven to 450º F.
In a medium bowl, mix the arrowroot and salt; set aside.
In a small saucepan over medium heat, bring the oil, water, vinegar, and garlic powder just to a boil. Remove from heat and pour over arrowroot mixture; stir to combine.
Add the egg and stir, then add the coconut flour and Italian seasoning; stir, then knead until a smooth dough forms.
Roll into a 12-14 inch circle and bake on a greased pizza pan for 15 minutes or until crust becomes light golden brown.
Remove from oven, add toppings, and bake 3-5 more minutes.
