Valentine's Day Dark Chocolate Mousse
- 1/3 cup dark chocolate
- 2 egg yolks
- 2 egg whites
- 1 pinch Real Salt
Melt the dark chocolate. Let cool slightly, then mix in the egg yolks. Set aside.
In a medium bowl, beat the egg whites and salt on high speed until stiff peaks form.
Using a rubber spatula, carefully fold in 1/3 of the whites to the chocolate mixture, followed by the rest.
Pour into ramekins and chill for at least an hour.
